I do most, actually all of the cooking in our house. Chris bakes… cookies 🙂 When I get home from work I say hi to my babies and get to cookin’! I want to make meals that are fast but healthy so here are a few of my go-to’s.
Greek Chicken with Herby Vegetable Couscous and Tzatziki
Takes 15 minutes to make. This is a delicious meal from Jaime Oliver’s 15-Minute Meals Cookbook. So simple but lots of flavour. I cut the veggies smaller next time and maybe try a different spice instead of all spice. Maybe just salt, pepper and oregano or even mix it up and go with chili powder for a blackened chicken. Easy Honey Garlic Chicken
Takes 15 minutes to make. This is addictive and is one of our favourites! I use skinless, boneless chicken thighs and cut them into cubes. I throw rice in the rice cooker while this is bubbling away on the stove. Full recipe.
Steamed Cajun Cod with Cilantro and Lime
This takes 15 minutes to make and feeds 2 people. I didn’t find this recipe online, but it’s inspired by my mom’s Cod with black bean and spring onions dish. I make stir fry veggies and rice on the side. Next time I make this, I’m going to use at least 2 teaspoons of chilli powder, in this photo I probably used half of a teaspoon.
Ingredients:
1 pieces of cod
2 teaspoons of chilli powder
salt and pepper
1 lime
1/3 cup of chopped cilantro
Cut cod into serving sized pieces. Heat up a bit of water in a non-stick pan (maybe 1/8 cup), toss the your cod in salt and pepper then sprinkle chilli powder on top of cod and place in pan. Let it simmer then cover for 3 – 4 mins or until fish looks flakey. When it’s done, take out of pan and place on a serving plate. Cut your lime in half, and squeeze half of a lime on top of the cod. Cut the other half into wedges for serving. Sprinkle on your chopped cilantro.
